This is such an easy dish but so satisfying.  Be sure to marinate the chicken for at least 20 minutes.  Stir fry it briefly then set aside.  You will add the chicken back to the wok after the vegetables go in.  This technique is called “velveting” the chicken.  I used chicken tenderloins cut into chunks and they were perfect.  White chicken meat is easier to overcook than dark meat (so don’t overcook it!) but I prefer the taste of white meat in a dish like this.

    This is a fun dish to make. Get your mise en place ready because when you start the stir fry, it will go fast. The trick here is to boil your noodles just enough to soften them, two minutes let's say. If you overcook the noodles they will get sticky. Sticky noodles won't ruin the taste of this dish, though. You really can't mess this up!

    Step 1

    Mix all ingredients for the sauce except the cornstarch. At the end of recipe when you add the sauce to the wok, you will pour in a little cornstarch slurry. But, for now, just mix all the other ingredients.

    Step 2

    Velvet the chicken: Cut the chicken into chunks and put in a big pyrex measuring bowl. Pour some of the sauce over the chicken. Sprinkle at least 2 teaspoons cornstarch over the chicken and rub it into the meat. Put in the frig for about 20 to 30 minutes.

    Step 3

    Get a pot of water to the boiling point and dunk the noodles into it for about two minutes. Strain and rinse with cold water. Set aside.

    Step 4

    Start the stir fry. Heat the wok until almost smoking. Swirl in some neutral oil. When it is hot, add the chicken pieces and stir fry until ALMOST done. The chicken will cook some more later. Just get the pink out of it. Then set aside.

    Step 5

    Now, stir fry the garlic - don't burn it -- then add the vegetables. Cook until the cabbage and carrots are soft. Add the chicken pieces again and let them cook a little more until they are done but still tender.

    Step 6

    Add the noodles. Give the whole thing a good stir.

    Step 7

    Add the sauce. Move the vegetables aside so that you can pour in the cornstarch slurry and stir the sauce while it thickens. Stir the whole dish together and combine. You're ready to serve!
